Council Grove, Kansas

When those first wagons turned west and headed for California, Council Grove, Kansas, became known as the birthplace of the Santa Fe Trail. It was in a grove of trees near the little community where a treaty was negotiated with the Osage tribe, a piece of paper that guaranteed save passage across Indian land for travelers heading toward sundown. One of the historic sites in a driving tour of Council Grove is the Last Chance Store, which provided a final opportunity for pioneers to purchase such provisions as sowbelly, beans, whiskey, and other supplies.
Council Grove Chicken with Asparagus
3 chicken breasts, halved
2 tablespoons flour
3 tablespoons vegetable oil
1/2 cup crumbled bleu cheese
1/2 cup dry white wine
1 (10.75 ounce) can cream of chicken soup
1 lb fresh asparagus
- Coat chicken with flour; brown in oil.
- In shallow, 3 qt casserole, mix bleu cheese, wine, and soup.
- Arrange chicken in soup; spoon some over chicken to coat.
- Bake, uncovered, at 375 degrees for 30 minutes.
- Clean asparagus spears; cut in half, crosswise.
- Remove chicken from oven and arrange asparagus between chicken
- Cover tightly and bake 30 minutes, or until chicken is tender.
- Serves 6.
